Banana cream pie
Items needed
- For the pudding
- 4 cups whole milk
- 2/4 cup white sugar
- 1/2 cup flour
- 4 egg yolks, lightly beaten
- 1 tsp vanilla extract
- 2 tbsp butter
- 2 medium-sized bananas, sliced into 1/3 inch thick rounds
- 1/3 tsp salt
- Banana simple syrup
- For the crust
- Your choice of vanilla cookie crumbs, 2 cups
- 1 cup unsalted butter, melted and cooled

- For the crust
- Butter a 9-inch cake or pie pan to stick two to three layers of cling wrap. Make sure to leave some excess hanging over the sides of the pan. It serves as a support and mark when you lift the finished pie out of the pan.
- In a large mixing bowl, combine cookie crumbs and melted butter. Add butter little by little to reach the desired texture of wet sand.
- Transfer the crust mixture into the prepared pan. Press and layer the mixture using a spoon. Then, put the pan inside the fridge to chill the crust. Leave it there while you prepare the banana filling.
- For the pudding
- In a large mixing bowl, combine the flour, sugar, and salt.
- Add the eggs into the mixture and whisk until well combined.
- Add the milk and banana simple syrup into the bowl. Whisk together for about a minute or so. Don’t beat the mixture too quickly or harshly.
- Pour the mixture into a saucepan and cook over medium heat. Stir it constantly for about five to ten minutes until you reach the desired thickness.
- Remove the saucepan from the heat and add butter. Stir it again.
- Lastly, add the vanilla extract for flavour. Cover the mixture with plastic wrap and chill for at least two or three hours.
- Putting together the pudding into the crust/decoration
- Remove the crust and pudding mixture from the fridge.
- Cover the base of the crust with banana slices.
- Pour the pudding mixture on top of the banana layer. Then, you may top it either with banana slices or cookie crumbs.
- Chill the pie for at least four to six hours. Don’t do it overnight, or else the banana slices might turn brown and stale.
- If you have any whipped cream, add some on top when serving.
