- 1 lb of white or brown mushrooms, quartered (about 5 cups)
- 1 tsp salt

- 2 tbsp butter
- 1 tsp soy sauce
- 1 tbsp garlic, minced
Directions:
- In a large cast-iron skillet or frying pan, melt butter for 2 minutes over medium-high heat, or until it begins to sing. Sauté quartered mushrooms for 5-7 minutes, or until they begin to shrivel and lose moisture. To ensure even cooking, stir occasionally. It’s best not to stir it too much.
- Season with salt and pepper and Italian seasoning. Stir well to combine, then sauté the mushrooms for another 2-3 minutes, or until golden brown (but not dark brown yet). The salt will draw out even more water from the mushrooms.
- Toss in the soy sauce and garlic. Continue to cook for another 2-3 minutes. Soy sauce will speed up the caramelization process, which gives mushrooms their distinctive deep brown colour by gently breaking down their natural sugars.
