2. Oatmeal Cranberry Walnut Cookies
Ingredients
- 2/3 cup butter softened
- 2/3 cup brown sugar
- 2 teaspoons vanilla extract
- 2 eggs
- 1 1/2 cups oats
- 1 1/2 cups all purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 cup dried cranberries
- 1/2 cup chopped walnuts
- 2/3 cup white chocolate chips
Instructions

Preheat oven to 375

In a large mixing bowl, cream the butter, vanilla extract and brown sugar together until fluffy

Beat in eggs

Add oats, and mix well

Stir in the flour, salt, baking soda and cinnamon

Add the walnuts, cranberries and white chocolate chips, and mix until combined

Drop by rounded tablespoons onto a non-greased cookie sheets

Bake for 10 – 12 minutes or lightly brown
