11. Homemade Vegetable Beef Stew
Ingredients
- 6 large green onions
- 2 green peppers
- 1 or 2 cans of diced or whole tomatoes
- 3 carrots
- 10 oz or so of mushrooms
- 1 bunch of celery
- half a head of cabbage
- 1 package of Lipton onion soup mix
- 1 or 2 bullion cubes
- 1 48oz can of V8 juice
- Season to taste with salt, pepper, parsley, curry and/or garlic powder
Instructions
- Start by adding 48 oz of V8 juice to a large pot. Slice green onions and saute in a pan with oil. Cut green peppers into bite size pieces and add to pot. Take outer leaves off cabbage and cut half of the cabbage into bite size pieces and add to pot. Cut Carrots and mushrooms and add.
- Now it’s time to add your spices to taste.
- If you would like a spicier soup add some curry or cayenne pepper. Add in your bullion cubes (beef or chicken is fine)
- Cover and simmer on low heat for 2 hours.
