This feature has been labeled as deprecated. The recommended replacement is: disused:amenity=pub.
The reason is documented in Deprecated features. You are still free to continue to use or interpret this tag as you see fit since OpenStreetMap does not have “banned features”.
Under no circumstances should you (semi-)automatically change “deprecated” tags to something else in the database on a large scale without conforming to the automated edits code of conduct. Any such change will be reverted.

A dead pub is a pub which is no longer open. It may be set to re-open after a period of closure for refurbishment.

This tag was invented in the early days as stop-gap while some endless debates were happening about the best way to map these and other closed/disused things. This tag seemed easily memorable and aligned with another wiki project called "dead pubs society" ...which no longer exists.

Use disused:amenity=pub instead
