At places tagged with amenity=grave_yard people (or sometimes animals) were buried. They are usually close to a amenity=place_of_worship (e.g. located within a churchyard), are often significantly smaller than cemeteries (landuse=cemetery) and are often no longer used. This tag can be used where the boundaries or precise location cannot be identified. For a larger area with a well marked boundary consider using landuse=cemetery.

You can add religion=* and denomination=* tags for more information.
The whole area or campus, containing the graveyard, the religious building (place_of_worship), buildings for staff residence or education, bell towers, workshops, etc., can be tagged with landuse=religious.
For a burial ground separate from a place of worship for regular services, typically use landuse=cemetery — especially if it's still used for burials.
