10. Vegetable Stew With Coconut Milk

Ingredients

• Cinnamon stick – 1 inch
• Cardamom seeds – 5
• Cloves – 3
• Cumin seeds – 1 tsp
• Onion chopped – 1
• Ginger grated –  1 inch
• Garlic cloves chopped – 5
• Green chilies – 3 to 4
• Carrot chopped – 1
• Capsicum chopped  – 1
• Cauliflower florets – 12
• Potatoes chopped – 2
• Coconut milk – 1 cup
• Corn Flour / Rice Flour  – 2 1/2 tbsp
• Vegetable oil / Coconut Oil –  1 1/2 tbsp
• Salt to taste

Instructions

Step I

1. Heat oil in non-stick pan.  Add cloves, cardamom, cinnamon and saute for few seconds.
2. Now add the cumin seeds and saute for another 30 seconds.
3. Add the onion, ginger, garlic and green chilies and saute till onion becomes soft and translucent.

Step II

1. Add all the vegetables, salt to taste, coconut milk and water if required for the desired consistency and bring it to nice boil.
2. In a small bowl add rice flour / corn flour or even all purpose flour (maida), half cup of water and mix well so that there are no lumps.
3. Add this to the vegetable stew and cook for another 2 to 3 minutes.
4. Vegetable Stew is now ready. Serve with appam or idiyappam and enjoy.

Recipe Notes

• I have used the store bought coconut milk in the recipe. You can also prepare the fresh coconut milk at home if desired.
• I have chopped all the vegetables into small pieces except the florets. Yo can chop them into desired shape.
• Vary the amount of green chilies as per your taste.
